It' s National Sugar Cookie Day. Usually I think of Sugar Cookies around Christmas time, recalling those moments around the Holiday's when I was a child, cutting out the cookie dough with cookie cutters and frosting the bells, trees and Holiday shapes, but sugar cookies are good anytime of the year, right?

Ingredients

  • 1 cup butter (no substitutes), softened
  • 1 1/4 cups confectioners' sugar
  • egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/8 teaspoon salt

In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Combine the flour, baking soda, cream of tartar and salt; gradually add to the creamed mixture. Shape into two 5-in. rolls; wrap in plastic wrap. Refrigerate for 1 hour or until firm. Unwrap; cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 8-10 minutes. Remove to wire racks to cool.

Although sugar cookies by themselves can be quite plain, they are incredibly versatile. Use cookie cutters to create shaped sugar cookies, and top them with frosting or sprinkles. You can also make cookie sandwiches with two sugar cookies and fillings like marshmallow, melted chocolate, or jam.
