One of my favorite hearty meals is chicken soup.

I have a great, affordable recipe that will fill your tummy with warmth and goodness.

Most of it is detailed in the video, and below is what you need to fill in the cracks.

I made a huge pot this time, we'll freeze some, give some away and eat off of it for a few meals. I'll give you the amounts for a regular pot of soup.

  • 1 whole frying chicken - make sure there are no packages of giblets, neck, hearts and livers inside. It's fine to cook with these, but they may be packaged in something you don't want to cook. And your guests probably don't want to be surprised by a chicken heart on their spoon.
  • 1 head cabbage
  • 4-6 carrots
  • 1/2 pound green beans
  • 3 gloves garlic
  • thumb sized piece of ginger
  • one onion (I forgot to buy one so I used onion salt in this soup)
  • chicken base or boullion
  • salt, pepper
  • 1 whole clove
  • 1 bay leaf
  • 3 tsp garlic salt
  • 1 tsp cayenne pepper
  • 2 tsp cumin

Wrap the chicken in cheesecloth. Cover with water in pot and cook, adding ingredients as you cut them. Make sure the chicken is fully cooked. Debone and add back to soup.

Serve with pasta, rice or quinoa.
