The restaurant name may be new to you, but the man behind it has lived in Northern Colorado before. Kevin Grossi, who opened the Jax Fish House and Oyster Bar in Fort Collins and was a chef there for three years, is bringing his Regional restaurant from Denver to Fort Collins this October. It's been doing business out of a shipping container on Pecos St. in Denver since 2016.

The location in Fort Collins they are targeting is at 130 S. Mason St. where Crafted restaurant was recently. It also held A Cut Above Deli and Tasty Harmony.

The Regional restaurant serves up spicy fried chicken sandwiches, lobster rolls, po boy's, and cheesy grits, just to name a few. Grossi told the Coloradoan, "I feel this concept fits Fort Collins really well." He also said as a chef, Fort Collins is "where I was the happiest."
