That's my wife hugging the Waffle Lab truck.

It's no joke. She really loves it. Why doesn't she marry it? Don't tempt her. She might.

It really is that good.

Now, the Waffle Lab is hoping to make a significant jump from food truck to brick and mortar restaurant.

According to the Coloradoan, they want to occupy the spot that held the Crooked Cocktail, which was also the former Gelazzi, which was the former something else in a spot between Oak and Mountain on College that inexplicably never succeeds to keep one business in place.

I think the Waffle Lab will do well there. It's made a name for itself, which none of those other establishments managed to do. At least they never came into my wheelhouse.

The Waffle Lab, on the other hand, has buzz. I heard about it before I tried it. And when I tried it, it was better than I thought it could be. They go a little light on how much syrup they give at first, but always have given me more when I asked. What I really want more of is their gravy. I could drink it.

Once, I strayed from their signature chicken and waffle dish and tried something else. It was good, not great like their trademark dish. But that's fine, because I think that an offering that is a true anchor, something we can set our clocks by, is what that Bermuda Triangle location in Old Town needs.

One would think that a storefront in Old Town would equal success, but as we've seen with the changing faces of the spot in question, 128 N. College Ave, that's not the case. It's going to need something like the Waffle Lab that has a great following to succeed.
