Part of my 50 pound weight loss journey the last few months has been to consume lots of protein. The hard boiled egg is a big part of my day and my routine. There is nothing more frustrating than peeling a hard boiled egg and having half the egg stick to the shell and losing it's shape. We all want an egg that peels easy.

I researched. I tried all the methods. This is the winner! Steam the egg. Seriously, the result is an easy to peel egg, with a creamy, not dry yolk that doesn't have any greenish color. Oh, and you must tap the flatter, bottom part of the egg when cracking the shell.

Hard boiled eggs still in the shell can keep up to a week in the refrigerator. If you peel them first, they will keep for about 5 days.
