Recipe Rescue: Black Eyed Peas with Chicken and Rice
They say that black eyed peas bring good luck for the new year, so let's cook us up some beans!
HERE'S WHAT YOU'LL NEED:
2 boneless skinless chicken breasts, 1 can of chicken broth, 2 Tbs of apple cider vinegar, 2 Tbs oil, 1 bunch of kale (or spinach if you prefer), 1 can of black eyed peas, 1 cup of brown rice, 4-5 garlic cloves, 2 Tbs tomato paste (add the rest of the can to your pot roast or beef stew tomorrow) 1 medium onion and a dash of paprika.
PUTTING IT ALL TOGETHER:
Cook the chicken on medium heat in the oil till brown on both sides (about 6 minutes each side) and remove from heat. To the pan add the tomato paste, onion (chopped) and rice cook until the onion starts to soften and stir, this should take about 3 minutes now add the garlic and kale after about 2 minutes add the vinegar, broth, paprika and bring to a boil, reduce and cover till the rice is cooked through and then add the chicken (chopped into bite sized pieces) and the can of black eyed peas (rinsed) let cook another couple of minutes till beans and chicken are warm and serve.
