When one restaurant closes in Old Town Fort Collins, doors open for another concept which will be taking the space in the near future.

According to the Coloradoan, Japanese eatery Suehiro closed down it's old town location last week with plans to become "Wabi Sabi Old Town". The new concept hopes to open up on January 18th.

Suehiro posted on their official Facebook page that an updated interior will be included in the relaunching of the restaurant, including monitors over the sushi bar so you can see your food being prepared.

The post continues to say that there will be more comfortable seating and the dining area will be open and more inviting.

The Menu, created by Chef Micki Hudson, will be a blend of "New Style Japanese" weighted heavily towards "Tapanese". Specialties such as Sizzling Sashimi and Crispy Rice will be offered alongside our signature New Style Sashimi and Signature Sushi Rolls. Additionally, guests can enjoy traditional fare such as Surf & Turf, Grilled Miso Salmon, and 10oz Kobe Burgers, finished off with delicious rotating desserts such as Green Tea Cheesecake and Chocolate Pot de Creme.

The Suehiro location in the Front Range Village on Harmony in Fort Collins will not be affected by the change of the Old Town location. The Harmony location is under different ownership.
