I've only been to Boulder a handful of times, but one of the highlights of my time there was trying a Mexican restaurant called Illegal Pete's.  I love Mexican food, and I can be picky about it sometimes, but Illegal Pete's was fantastic.  So of course, I'm super-excited by the news that Illegal Pete's wants to open a store in Fort Collins!

According to the Coloradoan, the Illegal Pete's Owners have been looking into opening a Fort Collins location for months, and have now set a goal of opening in the fall of 2013.  They're said to be eyeing locations in the Old Town area.

Several spaces are available in Old Town Fort Collins right now, including the space in Old Town Square being vacated by Beau Jo’s Pizza, the former Goodwill Building and the old Life of the Party store. Rasta Pasta is also leaving, but La Luz Mexican Grill is planning to take over that space. There’s also space in the Bohemian Cos.’ building that housed the now-closed Opiate Gallery.

Illegal Pete's currently has five locations in Boulder and Denver.  Fort Collins would definitely be a big deal for the small Colorado-based chain.

I'm stoked for this one.  Here's hoping Illegal Pete's does well in Ram country!
