I hope you weren't craving Mexican food! At least not Mexican from Boulder-based Illegal Pete's. The new Fort Collins restaurant's opening has been delayed until October. 

The new FoCO eatery at 320 Walnut St. is taking a bit longer than planned to build because of it's 1,500 square-foot roof. However, once it's finished, that rooftop will be one of the largest rooftop patios in Old Town. The restaurant was originally slated to be opened this month.

If you really want Illegal Pete's, there are four locations in Denver, and two in Boulder serving up "Mission-style” Mexican food.

In case you don't know, "Mission-style" is a type of Mexican food that first became popular during the '60s in the Mission District of San Francisco, and is distinguished from other burritos by its large size and inclusion of extra rice and other ingredients. Much like that of Chipotle or Qdoba.
