Maybe it's the Irishman in me, but few things in this world are better than good fish & chips.  Unfortunately, I'll never have the chance to try some from Jimmy C's, and neither will anyone else.

Jimmy C's, which has operated at 2722 S. College Ave. in Fort Collins for nearly five years, closed down for good on Sunday.

According to the Coloradoan, Owner James Comer said the business was just taking up too much time.  Between existing full-time jobs, a commute from Wellington, and trying to raise a family, it was time to move on from Jimmy C's.

“I’m actually personally pretty proud of that,” Comer said. “As a wholesome mom-and-pop shop, we definitely feel like we gave it a good shot. I have no regrets at all.”

Comer also said he has no plans to reopen.

I kept telling myself I was going to try this place eventually, and "eventually" just never came.  I guess I'll have to "seize the day" a little better in the future.
